To kick start fermentation, they malted a small portion of their yearly rye harvest. The delicate heating process opens up the grain, allowing the yeasts easier access to the sugars. This exceptional whiskey ages for 18 years in virgin oak barrels. On the nose, it's sweet and aromatic with notes of toasted oak, berries, and nutmeg. On the palate, it's elegant
